“Hop to it!” Roll up your sleeves for an evening of tasting and learning about Vancouver Island Brewing’s irresistible line-up of seasonal craft brews and how they pair with H2 Chef Caitlin Mark’s home-style farm-to-table creations. The evening promises to be fun, authentic, and shareable—principles that Vancouver Island Brewing and H2 Rotisserie & Bar were founded on. Try not to lick the screen as you read on about our five-course menu and VIB pairings!

grilled Okanagan Valley honey crisp apple,
18-month prosciutto di parma, arugula pistoux, almond dust

paired with Pipers Pale Ale (cask)

i:

heirloom beet salad, crisp garlic, Barston Island red frill mustard greens,
tangerine vinaigrette, H2 homegrown honey raw mustard

paired with the Victoria Lager

ii.

charred ricotta ravioli, cherry tomato consommé,
seared scallop, tarragon foam.

paired with Faller NWPA

for the palate…

pomegranate gellée, peach basil sorbet,
pickled grape, pink Himalayan sea salt

paired with Broken Islands Hazy IPA

iii. a. Fish:

oceanwise Pacific sablefish, roasted rutabaga, morel mushrooms,
and roasted artichoke, served with pickled radish,
dungeness crab mousse and mushroom liqueur.

paired with Harvest Saison

iii. b. Meat:

Fraser Valley duck breast, Okanagan Valley pumpkin purée,
braised leeks, and roasted turnip, served with a poached pear & calvados jus

paired with Misthorn Winter IPA

iv: Cheese:

Burrata cheese with organic olive oil,
merlot reduction, and house-made bread

paired with Dominion Dark Lager

v.

panna cotta trio, served with H2 homegrown honey,
cranberry, mint, cocoa nib & pistachio tuile

paired with 2017 Red Wine Barrell Aged Hermannator Ice Bock
